In this favorite meal of mine I use a mix of all greens. It smells of freshness and spring! It is also very light and pleasant.
1.5 kg zucchini (with dark green skin, not peeled), cut into cubes
1 sweet red pepper, finely chopped
1 onion, finely chopped
1 bundle spring onion, finely chopped
5 small carrots cut into cubes
1 ½ cup Basmati rice
sunflower oil to taste
2 pcs. bay leaf
black pepper to taste
smoked red paprika to taste
1 tbsp salt
savory to taste
1 cup tomato juice (tomato puree or canned)
1 bundle dill, finely chopped
parsley to taste, finely chopped
1 head of garlic, minced
In a saucepan, I fry the onion and the white part of the spring onion. When almost ready, I add the green stalks. Season with smoked paprika and stir for some seconds.
Add zucchini, rice, pepper and carrots. I use water to cover the content (or up to the desired density). Add the bay leaf, black pepper, salt and savory. Simmer for 30 minutes.
Finally, add tomato juice, dill, parsley and garlic. Boil for another 5 minutes to let the aromas mix well.
