Very pleasant pudding with intense vanilla flavor. I like desserts from the Middle East and the Mediterranean. It was interesting to find out that this pudding is also popular on the British Isles.
4 cups fresh milk
110 g semolina (wheat)
300 g sugar
vanilla to taste
walnut-size unsalted butter
Heat the fresh milk in a saucepan (it should not boil).
In a bowl, mix the semolina and the sugar. I add them to the milk with constant stirring on low temperature. It thickens almost immediately.
Take off the hob, add vanilla. Stir.
Beat the eggs in a separate bowl and, with constant stirring, add them to the semolina mixture.
Add the butter. Stir well.
Pour the mixture into ceramic bowls.
I put them in a tray.
In the tray, I pour water (2 cm from the bottom) and bake for about 30 minutes at 200ᴼC. I use ceramic bowls. DO NOT preheat the oven.
