I had a big quantity of wonderful mature pears. Started wondering what to make with them… And here’s what I developed …
Products for the dough:
2 eggs
2 cups white flour
1 and 1/2 cup sparkling water
vanilla to taste (more is better)
а pinch of salt
butter to taste, to spread оn every pancake
sunflower oil for greasing the pan

Products for the filling:
8 big pears cut into cubes (do not peel them)
50 g butter, unsalted
200 g white cooking chocolate
cinnamon to taste (optional)
Preparation of the filling:
In a frying pan, I fry the pears with butter. Constantly stir.
When ready (when getting a thick mixture), take them off the hob. Immediately add the chocolate and stir until it is completely melted. Flavor with cinnamon.

Preparation of the pancakes:
Using a mixer, beat all dough products until a smooth texture is obtained.
I use a ladle to spread out the mixture on a greased pan. Bake the pancakes on both sides. I turn them over with a flat wooden spatula.
Each ready pancake, I dab with a pat of butter – they become velvety smooth.
In the center of the circle, I put a generous amount of the filling and fold the pancake into 4.
