I use 2 different rectangular trays (23/11cm and 23/9cm)

I offer you a very tasty winter cake that is easy-made. Just be careful with baking. Cakes that contain fruits require longer baking time in the oven at a lower temperature. Otherwise, there is a risk of burning on top of it, but staying raw inside. I use 2 trays. You can bake in a bigger one.

Products you need:

2/3 cup of crushed into big pieces walnuts (should be felt)

1 piece of a large quince, grated

3 eggs

2 cups of flour (sifted)

1 cups of sugar

200 ml of fresh milk

a pinch of salt

1 teaspoon cinnamon

100 g unsalted butter (soft)

6 tbsp. of tangerine juice

1 teaspoon of baking powder

Preparation:

Mix all products very well by hand, do not use a mixer.

Put the mixture into the baking trays, previously lined with greased baking paper. Bake in a preheated oven at 200ᴼC. 10-15 minutes after baking, reduce the temperature to 180ᴼC.

It takes longer time for baking because of the quince. Check periodically with a wooden skewer if it is ready. Keep in mind that the cake remains juicy.
